Who doesn’t love chocolate covered chocolate? Even better when it’s raw, healthy, energizing, full of living enzymes, absolutely fudgey and soft and delicious and packed with nutrition.
These little soft bites of goodness are rich, sweet but not too sweet, chocolatey, chewy, and the raw ganache provides a little snap for your teeth when you bite into it, and then it just yields and melts in your mouth.
How to make them requires a little patience, but very few tools and know-how. Just time. It’s easy-peasy though, and the reward is oh my gods…..so worth it. If you make these for a lover, marriage proposal is nigh, let me tell you.
I went about making these in a very organized fashion so I could lay it all out for you and show you how it’s done. These balls are composed of a few different elements, so here they are:
Start with
10-12 dates. I used deglet noors, but medjool work very well also, and you would probably need more like 8.
Superfoods
- 2 tbspns Vivapura cacao powder
- 2 tbspns Vivapura chia seeds
- 1 tbpsn Vivapura green hemp seeds
- 1 tbspn Vivapura lucuma
- 1 tspn Vivapura maca
Spices
- 1 tspn cinnamon
- 1/2 tspn Vivapura Vanilla
- 1/4 tspn ginger
- 1/4 tspn sea salt
- 1/8 tspn cayenne
Binders
- 1 cup oat flour
- 1/2 cup walnuts
- 1/4 cup Vivapura mulberries
(grind the mulberries together with the walnuts til it’s nice and crumbly)
Sweetener
- 2/3 cup Vivapura coconut sugar
Ganache
- 1 cup Vivapura cacao paste
- 1/2 cup Vivapura cacao butter
- 1/4 cup maple syrup
- 1/2 cup Vivapura coconut creme
Garnish
I used Vivapura coconut flakes, but you can garnish with flower petals or a berry or jarrah bee pollen or whatever floats your boat.

Now you just simply put these things together. I would start by melting your ganache. Put all the ingredients into a glass pyrex like the one in the picture above and set into a big pot of water on the stove to gently heat it til it’s completely melted together. Add the maple syrup once it’s already melted so the sugar doesn’t burn. Once it’s melted, you can turn the heat off the stove and it will stay liquid for a while so you’re all good there. Then blend your dates in a food processor to a paste. Add hot water to help it along. Once a ball forms, add your superfoods, process, add your walnut mulberry binder, your oat flour, sugar, and spices. So, all your ingredients. Once a ball forms, roll this into smaller balls and set on a parchment lined sheet pan.

Put your balls in the fridge for about an hour to set up a bit, and then using a long tooth pick, gently dip the balls into the ganache to evenly coat. Set back in the fridge for another hour, and repeat as many times as you like for a thicker chocolate coating. Then sprinkle your garnish and viola! You’ve got the most decadent, healthy treat you can ever imagine. You are sure to enjoy this treat. Pinky promise.
